Do we live in Marshmallow Land? :(

I am looking outside my window & getting depressed just looking at the snow. Everything is so white and gray I feel like I'm living in marshmallow land :( Can you tell that I am not a winter girl. I need more colors in my life!!!
I am so bored today & I miss Mr. Sun ~sigh!!!~ 
So I decided to bake a cake :) But not any cake, my Glossy Lemon Cake! 

Here's an easy & simple recipe, so good you have to try it!

This cake is very simple to make. The intense lemony flavor comes from drenching the tender golden cake with the lemon syrup while its still warm.

What you need for the cake:

1 stick of tbsp of butter ( room temperature )
2/3 cup of sugar preferably superfine
2 eggs
Grated 1 lemon zest superfine
1 cup of self rising flour

What you need for the topping:

6 to 8 tbsp of super fine sugar ( depends how sweet you like it ) and 1 & 1/2 lemon juice.

*** You can use less lemon juice but I like it to be sweet and drenched in syrup ***

Steps:
  • First, you need to heat the oven to 350F and make sure you have a cake pan with waxed paper.
  • Next, beat the butter and sugar until it becomes creamy. 
  • Then beat the eggs one at a time and stir the lemon zest. 
  • At last add the flour. Once everything is mixed together tip the mixture into the pan and make sure it is smoothed evenly. 
  • Bake for about 20 min until risen and a bit golden.
  • Remove the cake from the oven place it on a cooling rack. 
  • Once you combine the sugar and lemon juice heat it up until it becomes warm not boiling and immediatley pour over the top of the cake. 
  • Let it cool in the pan for about 15 to 20 minutes. Once cooled, cut it into little squares & enjoy!  Mmmm Heaven...
*** You can also add 1 cup of dried cherries, blueberries or cranberries to your mixtures ***

Where is my cake! lol, btw here is a recipe I have made 3 times so far and am seriously addicted to... http://purplefoodie.com/nutella-pinwheel-cookies/ damn I have no cookie baking sheet yet, I would have so made them tonight lol. Ohh and to make them fluffier and not as hard u can add a tad of baking powder :P
